Recipe: Crustless Mini Quiches

An easy on-the-go breakfast for your and your family

It’s that time of year again when we make promises to talk at the dinner table instead of look at our phones, provide more homemade food for our children and even let them help in the kitchen. But with busy schedules, it’s so easy to let these New Year’s resolutions slip behind us as January turns to February and then March and so on. It happens to all of us. This month, I really want to share a dish that you can whip up quickly. You can enjoy it for breakfast with a glass of orange juice, or for lunch or dinner with a baguette and a salad. Because mealtime doesn’t have to be an ordeal, it should be what you want it to be – family time. With this recipe, you can keep your promise to be healthier and happier in 2017.


The quiche base  is my favorite scrambled eggs recipe, rich in heavy cream with a touch of smoked paprika. To begin, get your add-in combinations ready and sauté the vegetables and sausage. Then whip up the eggs, cream and seasonings and evenly distribute between 14-16 well-greased muffin tins. Make sure to really grease the edges and the sides so the eggs don’t stick. As the quiches are baking, have the kids help you set the table or plop down on the kitchen floor and read a book with them. (The kitchen floor happens to be my family’s number one reading spot.)

Crustless Mini Quiches 


Ingredients:
10 eggs
1/2 cup (125ml) heavy cream
2 tbsp (30ml) milk
4 green onions, chopped small
Salt and pepper, to taste
Pinch of smoked paprika, optional 

Add-ins:
Spinach and Feta Cheese: 
1 tbsp (15ml) olive oil
Bunch of spinach, chopped
Small onion, chopped
Cherry tomatoes, chopped
Feta cheese, crumbled

Sausage and Cheddar Cheese:
Sausage links
Cheddar cheese

Healthy Vegetables:
1 tbsp (15ml) olive oil 
Bell pepper, diced small
Onion, chopped
Spinach, chopped
Mushrooms, diced small
Cherry tomatoes, chopped

Directions:
1.    Spinach and Feta: Sauté the vegetables in the olive oil for 3-4 minutes. Add the cheese.
2.    Sausage and Cheddar: Cook the sausage. Slice thin. Mix with cheddar cheese.
3.    Healthy Vegetables: Sauté all of the vegetables in the olive oil until they soften. 

Preheat oven to 350F (175C). Generously grease the muffin tins. Whisk the eggs, heavy cream, green onions, salt, pepper and smoked paprika. Evenly distribute the egg mixture into the prepared muffin tins. Top with your favorite add-ins. Bake for 14-18 minutes. Top with green onions, for garnish. 
 

无壳迷你乳蛋饼配料


配料:
10个鸡蛋
1/2杯(125毫升)炼乳
2茶匙(30毫升)牛奶)
4个绿洋葱,切小
盐和胡椒,调味
少许烟熏红辣椒,可选用

乳蛋饼装饰:
菠菜和飞达奶酪             
1茶匙(15毫升)橄榄油
些许菠菜,切碎待用
小洋葱,切碎
樱桃番茄,切碎
飞达奶酪,剥成碎屑

香肠和车达奶酪:
香肠
车达奶酪

健康蔬菜:
1茶匙(15毫升)橄榄油
甜椒,切成小丁
洋葱,切碎
菠菜,切碎
蘑菇,切成小丁
樱桃番茄,切碎

做法:
1.    料理菠菜和飞达奶酪:将蔬菜放入橄榄油中炒3~4分钟,从火上拿开并加入飞达奶酪。
2.    料理香肠和奶酪:煮熟香肠,切片,然后拌入车达奶酪。
3.    健康蔬菜:所有蔬菜放入橄榄油中翻炒至蔬菜变软。
4.    将烤箱预热到华氏350度(175摄氏度),在麦芬杯上厚涂一层油脂。把鸡蛋,炼乳,绿洋葱,盐,胡椒和烟熏红辣椒用搅打器拌匀,然后倒入备用的麦芬杯中。
    放上你最喜爱的装饰物。
    入烤箱烤14到18分钟。
    最有加上绿洋葱来装饰。
